Beef Tripe is a very cheap offal, used in gastronomy and obtained from the different parts of the stomach of the bovine. It is a traditional food in many regions of Italy, in particular of Roman, Tuscan and Milanese cuisine. It is usually cut into strips and can be cooked in many different ways.
