Cold cut typical of the homonymous Tuscanian town, obtained from the lard of the pork seasoned in the marble basins of Carrara. Being considered a poor but nutritious dish, the lard was once given to the workers in the caves. Its taste is delicate, almost sweet, emphasized by the aromas with which it is seasoned, and can be consumed alone or combined with other ingredients (like crustaceans).
